CØYØSA

This week, friends, we're offering a little cocktail for your morning brunch, perfect for when you just want to relax and do nothing else with your morning. The Coyosa features none other than our COYOTE (so you know it's going to be good), which we'll cleverly mix with orange juice and a touch of maple syrup (why not, staying on theme). It's a bit like a mimosa... but with a kick, if you will. Even if you don't want it to, it'll still have a kick.

Recipe:
2 oz COYOTE
2 oz orange juice
0.5 oz lemon juice
0.5 oz maple syrup
2 dashes orange bitters
1 egg white

To decorate:
An orange slice
A few thyme sprigs

Preparation:
Pour everything into a shaker without ice. Yes, even the egg white.
Shake vigorously for about fifteen seconds to create a foam worthy of a sunrise in a sugar bush. Then add ice and shake again until the shaker is as cold as a May morning in Quebec these days. Double strain into a coupe or an old fashioned glass. Garnish with an orange slice and a little thyme to give it a chic boreal forest touch.

Result?
A velvety, citrusy, slightly wild cocktail... as if a fancy brunch decided to go live in a hunting camp.
