The Awakening

This week we're celebrating sugar shack season, which is just around the corner, and with a beautiful image of our friend the bear emerging from hibernation, we're offering you a unique cocktail this week for "old fashion" enthusiasts. It's a bit rough on the throat, but certainly a concoction that will snap you back to attention.

Plus, since CØYØT is Québécøl's answer to bourbons (except we make ours with 100% maple syrup), it's like the perfect ingredient to celebrate spring, sugar shack season, and... St. Patrick's Day. The whole shebang. Give me a few more lines and I'll even convince you it's the ideal Easter drink.

To make "L'Éveil" (The Awakening) you will need:

-2 oz of CØYØT

-3/4 oz of maple syrup

-2 dashes of orange bitters

-1 dash of cinnamon bitters

-Ginger beer

You'll start by putting the CØYØT, maple syrup, and the two bitters into your whiskey glass. With your long bar spoon, stir it all together until well combined. Then, add a large ice cube or a few smaller ones (but leave some room) and top it off with ginger beer. Stir very gently again with your bar spoon, and voilà, watch it melt outside.
