Québécøl 75
This week we're offering you the Québécøl 75, our own version of the "French 75," a cocktail that originally includes both vodka and champagne. However, our adaptation involves our now legendary Djinn Pickle (or Juniper Pickle Liqueur), for which we're unveiling today the mythical creature that represents it: none other than the feathered serpent. Since there are no (yet) snakes in Quebec, one could say it's like a large mythical garter snake that sprouted feather implants as it started balding... okay, now we're getting into more familiar territory. Our Djinn Pickle is a beast in itself; juniper distillate enthusiasts fall under its spell, and pickle lovers quickly show their reverence. It's no coincidence that we chose an ancient god to represent it.
So, to make your recipe this week, you'll need:
-1 and 1/2 oz of our Juniper Pickle Liqueur
-1/2 oz of pickle juice
-1/2 oz of lemon juice
-1/2 oz of maple syrup
-3 oz of champagne or sparkling wine (money doesn't grow on trees, we know)
-Tajin or Cajun spices for the rim
-Ice
-Pickle ice
Using additional pickle juice, dip the rim of the glass (margarita coupe) in pickle juice, then in the spices to rim it. Add the Juniper Pickle Liqueur, pickle juice, lemon juice, maple syrup, and ice to your shaker, and shake it like you want to chase away the coming winter, until your fingers freeze on the shaker. Then, strain the mixture into your previously rimmed margarita coupe, and add the champagne on top.
Finish it with a pickle ice cube.
Pickle ice:
-Slice a whole pickle thinly and add the slices to a good-sized ice mold. Fill it halfway with pickle juice.
-Freeze overnight or until the cubes are solid
