Solstice (The)

This week, the Alchemist is back from his bowl of fresh air and offers you the Solstice. As expected, we were better off not knowing what he was doing in the forest last week. Basically, there was a lot of dancing in his underwear around a fire to celebrate the summer solstice... and that's where the inspiration for our drink this week came from. The Solstice combines the wild power of our CØYØT with the beauty, freshness and summery character of our Spritz Boréal . A bit like Beauty and the Beast if you will (by philosophizing a little too much after 3-4 Solstices).

To make a solstice you will need:

-2 ounces of CØYØT

-2 ounces of Boreal Spritz

-1 ounce of special basil syrup

-1/2 teaspoon lemon juice

-3 ounces of club soda

-A few chopped strawberries for garnish

-5 basil leaves

Special Basil Syrup:

-1/2 cup of water

-1/2 cup maple syrup

-2 ounces fresh basil

To make the syrup - put the maple syrup and water in a small saucepan and heat until everything is dissolved.

Bring it to a simmering temperature (not boiling but not far) remove from the heat and put the basil in.

For the cocktail:

You take the 6 basil leaves and crush them in the bottom of your shaker. You add your CØYØT and your Spritz Boréal , your lemon juice and your basil syrup. You add ice and you shake it enough to make it really cold (count 20 happy Saint-Jean). Then you filter it in a "rock" type glass, on nice fresh slippery ice, add the club soda then you can garnish with strawberry slices and basil leaves.

Now sit on the edge of the BBQ, take a sip and forget about your day!
